Only recently has my husband started requesting pancakes and waffles. I’m not sure why, as he hasn’t wanted them for years.
I have found a pretty good pancake recipe
Ingredients:
- 1 cup of flour
- 1 tablespoon of sugar
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 egg (beaten)
- 1 cup buttermilk
- 2 tablespoons oil

Directions:
Sift dry ingredients together into a mixing bowl. Add beaten egg, water, and oil. Beat just until the batter is smooth. DO NOT OVERBEAT.

Drop from a spoon onto a hot, greased griddle and cook until top is full of tiny bubbles and the underside is brown. Turn and brown on the other side.

Yield: Approximately ten 4-inch pancakes.
